My favorite protein powder in this recipe is this 4 ingredients vanilla protein powder from Wellious. It has a delicious vanilla flavor and is sweetened with monk fruit so theres no added sugar. It is one of the cleansest proteins I’ve seen with just 4 simple ingredients. However if you don’t use protein powders, just sub for oat flour- 1/2 cup!

Equipment
Method
- 1. Blend up 1 cup raw cashews in a high powered blender to make cashew flour.
- 2. Use a lemon zester to zest 2 lemons. Juice 1 of the lemons and set aside the juice. You will need about 2 -3 tbsp of lemon juice.
- 3. Add the lemon zest, cashew flour, protein powder, pitted dates to a food processor and blend until smooth. Slowly add the lemon juice one tablespoon at a time- you don't want the mixture to be too wet, but it should hold together when you squeeze it.
- 4. Roll the dough into bite size balls. Roll balls in 2 tbsp of vanilla protein powder for a frosty look.
