Lemon Power Balls made with just 4 ingredients! Tastes like a lemon cookie but is super healthy and has added protein powder for an extra boost. These lemon balls are gluten free, dairy free and refined sugar free- the perfect sweet treat when you need a pick me up but still want something healthy.

WHATS IN EASY LEMON POWER BALLS?

  • lemon zest plus juice
  • medjool dates
  • vanilla protein powder (or oat flour)
  • raw cashews blended into flour

THATS IT! The result is a yummy lemony no bake cookie ball!

SUPER EASY STEPS TO MAKE THEM:

  • Blend up the raw cashews into flour first
  • Use a zester to zest 2 lemons, then cut them in half and squeeze out 3 tbsp of juice
  • Blend up all ingredients in a food processor til smooth, then roll into balls!

My favorite protein powder in this recipe is this 4 ingredients vanilla protein powder from Wellious. It has a delicious vanilla flavor and is sweetened with monk fruit so theres no added sugar. It is one of the cleansest proteins I’ve seen with just 4 simple ingredients. However if you don’t use protein powders, just sub for oat flour- 1/2 cup!

No Bake Carrot Cake Balls

Ingredients
  

  • 2 large carrots shredded
  • 8 pitted medjool dates
  • 1 cup rolled oats
  • 1 cup walnuts or do half walnuts half pecans
  • 1 tsp ceylon cinnamon
  • 1/2 tsp ginger powder
  • 2 tsp vanilla extract
  • 1/2 cup raisins stirred in after

Equipment

  • 1 Food processor

Method
 

  1. 1. Shred up 2 large carrots. I use my food processor's shredder attachment since I will be adding the rest of the ingredients to the food processor anyways.
  2. 2. Remove the shredder attachment from the food processor and place in the S blade. Add in the rest of the ingredients besides raisins and process till crumbly. Add in the raisins and pulse a few times to combine. Roll into bite sized balls. Place in a large mixing bowl and toss with vanilla sweetened protein powder if desired for a frosty look.
