Lemon Power Balls made with just 4 ingredients! Tastes like a lemon cookie but is super healthy and has added protein powder for an extra boost. These lemon balls are gluten free, dairy free and refined sugar free- the perfect sweet treat when you need a pick me up but still want something healthy.

WHATS IN EASY LEMON POWER BALLS?

  • lemon zest plus juice
  • medjool dates
  • vanilla protein powder (or oat flour)
  • raw cashews blended into flour

THATS IT! The result is a yummy lemony no bake cookie ball!

SUPER EASY STEPS TO MAKE THEM:

  • Blend up the raw cashews into flour first
  • Use a zester to zest 2 lemons, then cut them in half and squeeze out 3 tbsp of juice
  • Blend up all ingredients in a food processor til smooth, then roll into balls!

My favorite protein powder in this recipe is this 4 ingredients vanilla protein powder from Wellious. It has a delicious vanilla flavor and is sweetened with monk fruit so theres no added sugar. It is one of the cleansest proteins I’ve seen with just 4 simple ingredients. However if you don’t use protein powders, just sub for oat flour- 1/2 cup!

Ingredients
  

  • zest of 2 lemons
  • 3 tbsp lemon juice
  • 10 pitted medjool dates
  • 1/2 cup vanilla protein powder or oat flour
  • 1 cup raw cashews blended into flour first

Equipment

  • 1 Food processor

Method
 

  1. 1. Blend up 1 cup raw cashews in a high powered blender to make cashew flour.
  2. 2. Use a lemon zester to zest 2 lemons. Juice 1 of the lemons and set aside the juice. You will need about 2 -3 tbsp of lemon juice.
  3. 3. Add the lemon zest, cashew flour, protein powder, pitted dates to a food processor and blend until smooth. Slowly add the lemon juice one tablespoon at a time- you don't want the mixture to be too wet, but it should hold together when you squeeze it.
  4. 4. Roll the dough into bite size balls. Roll balls in 2 tbsp of vanilla protein powder for a frosty look.
