Hidden Veggie Nacho Cheese Sauce
Equipment
- 1 high powdered blender
- 1 small pot to boil veggies
Ingredients
For the veggies
- 3 small carrots chopped
- 1 red bell pepper cut into pieces
- 1 clove garlic
- 1/2 zucchini cut into pieces
- handful of cherry tomatoes
- 2 cups water
For the sauce
- 1/2 cup raw cashews
- 1/2 cup hemp seeds or sub more cashews
- 1/4 cup nutritional yeast
- 1 lemon juiced
- 1 tsp chipotle powder
- 2 tsp liquid aminos
- optional additional pinch of salt to taste
- about 1 cup reserved veggie boiling water
Instructions
- 1. Boil all the veggies water in a small pot until they are fork tender- about 10- 15 minutes. Set aside and let cool for a few minutes.
- 2. Add boiled veggies plus the rest of the ingredients to a high powdered blender and blend on high until smooth. Taste and adjust salt levels- I like it without the extra salt but you may want to add some to your taste preference.
