Hidden Veggies Nacho Cheese Sauce

Dairy free/ vegan nacho cheese sauce with hidden veggies! This is such a yummy, satisfying and easy recipe to whip up! And to make it even better its secretly healthy with all the veggies blended in it! Cashews and hemp seeds give this recipe a creamy consistency, nutritional yeast gives it a cheesy flavor and lemon juice gives it some tang! I use liquid aminos for a hint of salty flavor but you could add an additional pinch of salt to adjust it to your preferences! Pour this cheese sauce over veggies, chips, potatoes or eat it like a dip!

Hidden Veggie Nacho Cheese Sauce

Equipment

  • 1 high powdered blender
  • 1 small pot to boil veggies

Ingredients
  

For the veggies

  • 3 small carrots chopped
  • 1 red bell pepper cut into pieces
  • 1 clove garlic
  • 1/2 zucchini cut into pieces
  • handful of cherry tomatoes
  • 2 cups water

For the sauce

  • 1/2 cup raw cashews
  • 1/2 cup hemp seeds or sub more cashews
  • 1/4 cup nutritional yeast
  • 1 lemon juiced
  • 1 tsp chipotle powder
  • 2 tsp liquid aminos
  • optional additional pinch of salt to taste
  • about 1 cup reserved veggie boiling water

Instructions
 

  • 1. Boil all the veggies water in a small pot until they are fork tender- about 10- 15 minutes. Set aside and let cool for a few minutes.
  • 2. Add boiled veggies plus the rest of the ingredients to a high powdered blender and blend on high until smooth. Taste and adjust salt levels- I like it without the extra salt but you may want to add some to your taste preference.

Notes

Use as a dip with crackers/ chips or veggies or pour as a sauce on top of steamed veggies like broccoli or potato!
