
Vegan oat and flax pancakes. This is my favorite vegan pancake recipe made from oat flour, ground flax seeds, and a few other simple ingredients! They are so tasty while using all whole foods plant based ingredients. Heres how to make them:
vegan Oat flax pancakes ingredients:
dry ingredients
- One and 1/4 cup rolled oats
- 1 tbsp ground flax seeds
- 1 tbsp baking powder
- 1 tbsp sugar or other sweetener of choice
wet ingredients
- 1 cup plain soy milk or any other plain plant milk of your choice
- 1 tbsp apple cider vinegar
steps:
- Blend the rolled oats in a blender for about 60 seconds until it turns into a flour. You might have to stop and scrape down the sides of the blender a couple times to make sure everything gets blended evenly.
- In a small bowl mix together the plant milk and the apple cider vinegar. Let sit for a couple minutes to thicken. This is your vegan “buttermilk”.
- In a medium sized bowl mix together the dry ingredients- the oat flour, ground flax seeds, baking powder, and sugar.
- Pour the wet ingredients into the dry and stir just until combined. Let sit for a couple minutes.
- Heat up a skillet on medium heat with some vegan butter. Pour your pancakes into the pan 2 at a time. Flip when they are golden brown and bubbly. Recipe makes about 5 pancakes.
- Add frozen or fresh blueberries or vegan chocolate chips to make fun pancakes! 🙂

Notes
To make ground flaxseed meal you have to blend up your whole flaxseeds in a blender or coffee grinder. OR you can buy flaxseed meal in the store already ground up. you can omit the flaxseeds and the recipe will turn out the same.
For variation- try adding some blueberries or vegan chocolate chips into the batter 🙂
You can use any plant milk you want but in my experience soy milk turns the most “buttermilky” than other milks.
