Oat Flax Pancakes
Healthy vegan pancakes made from oat flour, flax meal, soy milk, baking powder, apple cider vinegar

dry ingredients
- 1 1/4 cup rolled oats
- 1 tbsp ground flax seeds
- 1 tbsp baking powder
- 1 tbsp sweetener I use monk fruit powder
wet ingredients
- 1 cup plain soy milk or any other plain plant milk of your choice
- 1 tbsp apple cider vinegar
Blend the rolled oats in a blender for about 60 seconds until it turns into a flour. You might have to stop and scrape down the sides a couple times.
In a small bowl mix together the plant milk and the apple cider vinegar. Let sit for a couple minutes to thicken. This is your vegan "buttermilk".
In a medium sized bowl mix together the dry ingredients- the oat flour, ground flax seeds, baking powder, and sugar.
Pour the wet ingredients into the dry and stir just until combined. Let sit for a couple minutes.
Heat up a skillet on medium heat with some vegan butter. Pour your pancakes into the pan 2 at a time. Flip when they are golden brown and bubbly. Makes about 5 pancakes.
To make ground flaxseed meal you have to blend up your whole flaxseeds in a blender or coffee grinder. OR you can buy flaxseed meal in the store already ground up. you can omit the flaxseeds and the recipe will turn out the same.
For variation- try adding some blueberries or vegan chocolate chips into the batter :)
You can use any plant milk you want but in my experience soy milk turns the most "buttermilky" than other milks.
