These vegan chocolate chip cookies are my new favorite creation! They have become my go to recipe when I want a sweet treat while still trying to be healthy. They are slightly crisp on the outside and super gooey and sweet on the inside. Even better, these vegan chocolate chip cookies and gluten free, oil free, and flourless! I tried to make them as healthy as possible without losing on taste or texture.

1 cup creamy almond butter (make sure its not too runny)

1/2 cup coconut sugar

1/4 cup apple sauce

1 tsp vanilla extract

1 packed scoop vanilla protein powder

1 tsp baking soda

1/2 tsp baking powder

how to make them

First, start out with creamy almond butter. Measure out 1 cup into a large mixing bowl. Make sure your almond butter is not too runny or you wont get the same end result as me. Even better, try and use the bottom of the almond butter jar so it will be thicker. Next mix in a heaping 1/4 cup of unsweetened apple sauce. Next add in 1/2 cup of coconut sugar. I love the caramely sweet taste of coconut sugar in these cookies but any sugar would work. Add 1 tsp of vanilla extract. Mix all of these wet ingredients together until smooth and set aside.

Next in a smaller mixing bowl combine the dry ingredients. Measure out 1 packed scoop of vanilla protein powder. I use the brand Four Sigmatic and it works really well in these cookies. Mix in 1 tsp of baking soda and 1/2 tsp of baking powder. Pour the dry into the wet ingredients and stir until smooth. Stir in the chocolate chips. The dough should be thick enough to roll into balls.

Scoop out the dough into 1.5 inch balls and roll them into flat round disks with your hands. Spread them out on a parchment lined baking sheet. Bake for 12 minutes at 350 on the top rack. When they are done let them cook for 5- 10 minutes before removing from the pan.

Ingredients
  

  • 1 cup almond butter creamy, salted
  • 1/2 cup coconut sugar
  • 1/4 heaping cup plain applesauce
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 packed scoop protein powder I use Four Sigmatic vanilla protein powder
  • 1/4- 1/2 cup vegan chocolate chips

Instructions
 

  • 1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
  • 2. In a large mixing bowl combine the almond butter, coconut sugar, applesauce, vanilla extract and stir well until smooth. Set aside.
  • 3. In a small mixing bowl combine the packed scoop of protein powder, baking soda and baking powder and stir well.
  • 4. Pour the dry ingredients into the wet and stir to combine. Add the chocolate chips and stir.
  • 5. Use a 1.5 inch cookie scoop to scoop the cookies into balls. Use two spoons if you don't have a cookie scoop. Shape the cookies into flat balls using your hands. Place them onto the parchment paper lined baking sheet (I can fit them all on one sheet because they don't expand that much when baking).
  • 6. Bake for 12 minutes at 350 degrees on the top rack. They will still be squishy when you take them out of the oven so let them cool on the baking sheet for at least another 5 minutes.
