Plant based, sugar free recipe for lentil sloppy joes made in the Instant Pot! I use monk fruit extract in this recipe to make it sugar free but other options are dates chopped up really small, date syrup or maple syrup! I use green lentils in this recipe but if you are using brown lentils you may have to adjust the cook time. This recipe makes a huge amount so you can use it for meal prep and eat it for a few days!
Lentil Sloppy Joes- Sugar Free

- Instant Pot pressure cooker
Ingredients
- onion diced
- 1 green bell pepper diced
- 1 orange or red bell pepper diced
- 8 oz diced mushrooms
- 1 15 oz can tomato sauce- low sodium
- 1 can tomato paste
- 4 cups veggie broth
- 3 tbsp apple cider vinegar
- 3 tbsp monk fruit sweetner
- 5 cloves minced garlic
- 2 tbsp dijon mustard
- 2 tsp liquid aminos
- 1 tbsp chili powder
- 2 tsp chipotle powder
- 1 lb green lentils- sorted and rinsed
Instructions
- 1. Set the Instant Pot to sauté. Once its heated up add in the onions, peppers and mushrooms and let them cook down for a few minutes. Splash in veggie broth as needed to prevent sticking.
- 2. Add in the rest of the ingredients and stir. Put on the lid and set the valve to "sealing". Press "cancel" to turn off sauté mode and then press "manual" or "pressure cook" and set the time to 10 minutes. If you are using brown lentils you may have to add more time- about 5 extra minutes depending on the size. Do a full natural release at the end- about another 17- 20 minutes. Serve on whole wheat buns or in whole grain wraps.
