This recipe was originally posted to my youtube video “budget recipes with 5 ingredients or less”. I wanted to share some of my favorite affordable recipes with just a few ingredients you probably already have in your pantry. I used to have this recipe all the time for dinner when I was in college and had a strict $30 weekly grocery budget. It is filling, flavorful the black beans give you protein, and best of all it only costs $2.50 for the entire recipe!
I make this recipe in the Instant Pot but you can make it on the stove top by simmering all of the ingredients for about 40 minutes covered. I like to add in the black beans last so they don’t get smushy. Salsa is used to flavor this recipe but you could also add some chili powder, cumin, and red pepper flakes to spice it up.
Salsa Rice
Equipment
- Pressure cooker
Ingredients
- 1 cup brown rice rinsed
- 1/2 cup chunky salsa
- 1 cup frozen corn
- 1 1/2 cups water
- 1 can black beans drained and rinsed
Instructions
- 1. Add the brown rice, salsa, corn, and water to the Instant pot and stir. Put the lid on. Turn the valve to sealing. Press manual/ pressure cook and set the time to 18 minutes. Do a natural release when its done.
- 2. After the full natural release is done, carefully take off the lid. Stir in the rinsed black beans. Serve with avocado, cilantro, or vegan cheese. Makes 2 servings.
