Salsa Rice
Easy affordable vegan meal using rice, salsa, beans and corn

- 1 cup brown rice rinsed
- 1/2 cup chunky salsa
- 1 cup frozen corn
- 1 1/2 cups water
- 1 can black beans drained and rinsed
1. Add the brown rice, salsa, corn, and water to the Instant pot and stir. Put the lid on. Turn the valve to sealing. Press manual/ pressure cook and set the time to 18 minutes. Do a natural release when its done.
2. After the full natural release is done, carefully take off the lid. Stir in the rinsed black beans. Serve with avocado, cilantro, or vegan cheese. Makes 2 servings.
You can adjust this recipe to be made on the stove top or rice cooker.
