EXACT copy cat recipe of Erewhon’s famous kale white bean avocado salad! Featuring kale, white beans, avocado, seeds, and a simple lemony- dijon- maple dressing!
I’m a huge fan of Erewhon’s hot bar and grab and go food. Not only is their prepared food delicious but they use organic/ high quality ingredients which I appreciate! The downside is that Erewhon is well known for being crazy expensive. I wanted to figure out how to make these delicious healthy recipes at home to save money! Turns out their recipes are very simple and easy to make!
INGREDIENTS YOU WILL NEED
- curly kale
- 1 can cannellini beans
- avocado
- hemp seeds
- sunflower seeds
- pumpkin seeds
- extra virgin olive oil
- dijon mustard
- lemon juice
- maple syrup
- black pepper
HOW TO MAKE IT
- Whisk together the dressing ingredients in a small mixing bowl.
- Wash and de stem a large bunch of kale- approx 1 pound. Chop it up and add it to a large mixing bowl.
- Massage 1/2 of the dressing into the kale using your hands.
- Add in the drained/ rinsed white beans, chopped avocado, pumpkin, sunflower and hemp seeds and toss together. Top with more dressing and serve right away! Will keep in the fridge for a few hours.
RECIPE NOTES*
Erewhon uses a lot of olive oil in their recipes. In my version of this salad I cut the amount of olive oil in half and substituted the liquid from the can of white beans (aquafaba). This reduces the calories of the dressing and also acts as an emulsifier! Feel free to just do all olive oil- 1/4 cup total instead of the bean juice 💗

Erewhon’s Kale Avocado White Bean Salad
Ingredients
For the Salad
- 1 lb curly kale washed, stems removed
- 1 can white kidney beans/ cannellini beans
- 1 avocado diced
- 2 tbsp hemp seeds
- 2 raw sunflower seeds
- 2 tbsp raw pumpkin seeds
For the Dressing
- 2 tbsp good quality extra virgin olive oil
- 2 tbsp reserved white bean liquid or sub more EVOO
- 1 tbsp dijon mustard
- 2 tbsp lemon juice
- 1/2 tbsp maple syrup
- 1/4 tsp black pepper
- pinch of salt
Instructions
- Drain one can of white beans and reserve the liquid in a small bowl. Rinse the beans, set aside.
- Wash the kale well and dry. Remove the stems and roughly chop into bite size pieces. Set aside in a large bowl.
- Whisk together all of the dressing ingredients in a small bowl. Pour half of the dressing on the kale and massage it in with your hands.
- Add the white beans, diced avocado and seeds to the kale and mix. Top with more dressing and more seeds to your taste. Serve right away.
