HEALTHY WENDY’S FROSTY without any dairy, refined sugar, or pudding mix! This is a super healthy whole foods ice cream recipe with dates as a sweetener and walnuts for creaminess, protein powder for an extra boost, plus a hidden vegetable you’d never guess was in there! The result is soooo creamy and rich, you’d never guess it was secretly good for you! You can make this frosty recipe either chocolate or vanilla by changing the flavor protein powder you use.
Ingredients YOU WILL NEED
- WALNUTS– the source of fat/ creamy richness in this ice cream. Makes a super creamy dairy free nut milk. You may reduce some of the walnuts for a lower fat option. Try hemp seeds for a nut free option.
- FROZEN CAULIFLOWER RICE– a sneaky hidden veggie in this frosty recipe, adds volume and you cant taste it at all.
- PROTEIN POWDER– adds sweetness, vanilla flavor and 20-30 grams protein to the recipe. Use either chocolate or vanilla depending what flavor you want to make.
- MEDJOOL DATES– natural whole food/ unrefined sugar substitute in this recipe. For a lower carb option you can try pure monkfruit sweetener. Use 1-3 depending how sweet you want your frosty.
- WATER to blend it up. OR use soy or almond milk for extra richness.
- VANILLA BEAN POWDER– optional but adds additional vanilla flavor.
Instructions
1. Blend up all ingredients in a high powered blender til smooth.
2. Transfer mixture to Ninja Creami pint cup. Freeze overnight for at least 12 hours. Ninja Creami recommends 24 hours.
To make frosty-
- REMOVE ice cream pint from freezer and run sides under hot water for 1-2 minutes.
- BLEND using LITE ICE CREAM setting.
- SPLASH in 1-2 tbsp soy milk or other milk of choice.
- SCRAPE down sides of cup using butter knife to remove ice clusters stuck to the sides.
- BLEND AGAIN using LITE ICE CREAM SETTING 1 or 2 more times til desired consistency is reached.

- 8 walnut halves
- 1 cup frozen cauliflower rice
- 1 scoop protein powder chocolate or vanilla, depending which flavor you want to make
- 2 pitted medjool dates
- 1 1/4 cup water or soy milk for extra creaminess
- 1/4 tsp vanilla bean powder
Instructions
- 1. Blend up all ingredients in a high powered blender til smooth.
- 2. Transfer mixture to Ninja Creami pint cup. Freeze for at least 8 hours. Ninja Creami recommends 24 hours.
- 3. To make frosty- take out pint from freezer and run sides under hot water for 1-2 minutes. Blend up the ice cream on the "lite ice cream" setting on Ninja Creami. After one cycle, remove lid and splash in 2 tbsp soy milk and scrape down the sides using a butter knife. Blend it up on "lite ice cream" 1 or 2 more times til desired texture is reached. Serve right away. Makes 2 servings.
