Super easy batch prep recipe for tofu taco filling baked in the oven on a sheet pan! This recipe is doubled to make enough for a few days for meal prep. It is a great filling for tacos, burritos, taco salads or on nachos! This recipe uses 2 blocks of firm tofu, black beans, onion, red bell pepper, tomato sauce, lots of spices and I like to sneak some mushrooms in there for a chewy texture and for the health benefits! It is so easy to throw together and makes a whole bunch so you can enjoy it for a few days.
Tofu Sheet Pan Tacos- Batch Prep Recipe
Equipment
- 2 sheet pans
- parchment paper
- large mixing bowl
Ingredients
- 2 blocks firm tofu, pressed for 10 minutes and crumbled
- 1 onion diced
- 1 bell pepper chopped
- 4 oz diced mushrooms
- 1 15 oz can tomato sauce- low sodium
- 2 cans black beans drained and rinsed
- 2 tsp smoked paprika
- 2 tsp ground cumin
- 2 tsp chili powder
- 2 tsp garlic powder
- a few shakes of hot sauce like Tapatio
Instructions
- 1. Preheat the oven to 350.
- 2. Press the tofu for 10 minutes to drain out some of the water. If using extra firm tofu just pat down dry, no need to press. Crumble it up with your hands into a large mixing bowl.
- 3. To the mixing bowl add all of the ingredients and stir well to incorporate.
- 4. Spread mixture out on 2 baking sheets lined with parchment paper. Bake at 350 degrees for 20 mins, flip and bake another 10- 20 minutes depending on how wet the mixture is. I usually do 40 minutes total. Serve as tacos, burritos, in a burrito bowl or salad.
