Roasted Red Pepper Hummus

Roasted red pepper hummus- oil free, sugar free, delicious and healthy! Can be used as a dip with vegetables or chips or as a spread on a sandwich or wrap. Made with canned chickpeas, 1/2 jar of roasted red bell peppers (or you can roast your own), medjool dates, garlic and lemon! So simple and tasty.

INGREDIENTS  

  • 1 roasted red bell pepper- you can either roast it yourself or use about 1/2 jar of roasted bell peppers
  • 1 can chickpeas, low sodium or no salt added. Drain but save the liquid for blending.
  • 1/4 cup tahini- makes it super creamy without adding any extra oils
  • 2 pitted dates- adds natural sweetness without adding sugar
  • 2 cloves garlic
  • 1/2 large lemon juiced- about 2 tbsp
  • about 1/4 cup of reserved chickpea liquid or more to get desired thickness
  • salt to your taste- about 1/4 to 1/2 should be good, or omit completely to make this recipe salt free

INSTRUCTIONS 

  • 1. Add all ingredients to blender and blend until smooth and creamy. Season with salt to your taste, or omit for salt free option. Store in refrigerator for up to 5 days.
