Peanut Butter Date Balls

I love these no bake peanut butter balls because they are so easy to make and are sweetened with dates! You just throw all of the ingredients into a food processor then roll them into balls and you are done! You can dip them in melted vegan chocolate to make them extra special but most of the time I make these I just eat them without the chocolate.

I use 12 pitted medjool dates which equals about 1 heaping cup. If you are using the smaller deglet noor variety of dates then just measure out 1 heaping cup. Make sure you take all of the pits out before hand! I also make sure the dates are at room temperature so they are easier to blend up.

First blend up 1/2 cup of oats into oat flour in a food processor. Then add the dates, PB, pinch of salt and vanilla. Blend up all of the ingredients until it forms a huge dough ball. This will take a minute or 2 to turn into a completely smooth dough. You may need to stop and stir the mixture if it gets stuck on the sides. Scoop out the dough and roll into balls.

You can dip them into melted chocolate or just eat them as is. To dip them in chocolate- first melt 1 package of vegan chocolate chips either in a microwave or on top of the stove on a double boiler. If using a microwave- pour the chocolate chips into a microwave safe bowl and microwave in intervals of 20 seconds until melted. Stir in between each interval. To melt on the stove top- make a double boiler by boiling 1 cup of water in a sauce pan and placing the chocolate chips in a heat save bowl on top of the boiling water. Stir the chocolate frequently until the chips are all melted and smooth. Dip the PB balls into the chocolate and place on a parchment lined plate. Place them in the fridge for 10 minutes to harden up. The parchment makes the chocolate not stick to the plate.

Ingredients
  

  • 1/2 cup rolled oats
  • 12 pitted medjool dates about 1 heaping cup
  • 1 cup creamy salted peanut butter
  • pinch of salt
  • 1 tsp vanilla extract
  • 1 package vegan chocolate chips optional, for dipping the balls in chocolate

Instructions
 

  • Add the rolled oats to a food processor and blend for 1 or 2 minutes until it turns to a flour.
  • Add the peanut butter, dates, vanilla and salt to the food processor. Blend for a couple minutes until a single dough ball forms.
  • Scoop out the dough with a 1 inch scoop and roll into balls. Place on a plate lined with parchment paper.
  • Melt chocolate chips either in the microwave for 20 second intervals stirring frequently or make a double boiler on the stove top.
  • Roll the PB balls into the melted chocolate. Place them on parchment paper lined plate. Put them in the fridge for 10 minutes for the chocolate to harden up.

Notes

You don’t need to roll them in chocolate, you can eat them just as plain peanut butter balls! 
You can sub peanut butter for almond, cashew or sunflower seed butter.
