Instructions
Add the rolled oats to a food processor and blend for 1 or 2 minutes until it turns to a flour.
Add the peanut butter, dates, vanilla and salt to the food processor. Blend for a couple minutes until a single dough ball forms.
Scoop out the dough with a 1 inch scoop and roll into balls. Place on a plate lined with parchment paper.
Melt chocolate chips either in the microwave for 20 second intervals stirring frequently or make a double boiler on the stove top.
Roll the PB balls into the melted chocolate. Place them on parchment paper lined plate. Put them in the fridge for 10 minutes for the chocolate to harden up.
Notes
You don't need to roll them in chocolate, you can eat them just as plain peanut butter balls! You can sub peanut butter for almond, cashew or sunflower seed butter.
