Healthiest no bake cookie dough recipe ever! These cookie dough balls are made from dates, chickpeas, almond butter and protein powder. This recipe is super easy to make, you just add all the ingredients to a food processor, refrigerate for 20 minutes and your cookie dough is ready to enjoy! Makes a perfect snack when you want a sweet treat with healthy ingredients.

Ingredients
  

  • 10 pitted large medjool dates
  • 1 can chickpeas drained/ rinsed
  • 1/2 cup creamy almond butter or cashew butter
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 cup chocolate chips
  • 30 grams vanilla protein powder or unflavored

Instructions
 

  • 1. Place the pitted dates in a heat resistant bowl and pour boiling water over the dates. Let them soak for about 10 minutes to softer. Drain the water afterwards.
  • 2. Add the dates, chickpeas, almond butter, vanilla, baking soda to a food processor and blend until smooth. Add in the protein powder and blend again, add a bit more or less until you get a thick cookie dough consistency. Add in the chocolate chips and pulse to mix them up.
  • 3. Scoop the dough onto a plate using a cookie scoop. Refrigerate for 20 minutes. After 20 minutes the dough will be firm enough to roll into balls.
