- 1. Place the pitted dates in a heat resistant bowl and pour boiling water over the dates. Let them soak for about 10 minutes to softer. Drain the water afterwards.
- 2. Add the dates, chickpeas, almond butter, vanilla, baking soda to a food processor and blend until smooth. Add in the protein powder and blend again, add a bit more or less until you get a thick cookie dough consistency. Add in the chocolate chips and pulse to mix them up.
- 3. Scoop the dough onto a plate using a cookie scoop. Refrigerate for 20 minutes. After 20 minutes the dough will be firm enough to roll into balls.
