1. Place the pitted dates in a heat resistant bowl and pour boiling water over the dates. Let them soak for about 10 minutes to softer. Drain the water afterwards.
2. Add the dates, chickpeas, almond butter, vanilla, baking soda to a food processor and blend until smooth. Add in the protein powder and blend again, add a bit more or less until you get a thick cookie dough consistency. Add in the chocolate chips and pulse to mix them up.
3. Scoop the dough onto a plate using a cookie scoop. Refrigerate for 20 minutes. After 20 minutes the dough will be firm enough to roll into balls.
