I wanted a chocolate chip cookie recipe that was oil free and flourless. I came up with this recipe by combining a few others recipes I found online. They are easy to make and so yummy! Definitely one of the best healthy-ish vegan cookies I’ve ever made. It is gluten free, flourless, oil free, and vegan! I love that they don’t require vegan butter like a lot of other recipes do. You will need a food processor to blend everything up. This cookie flattens out when baking and is crisp on the outside and gooey on the inside. The longer you bake them for the crispier they become.
I usually prefer to exclude sugar in my recipes but in this recipe the sugar is what holds them together. There is a scientific reason for it: something about the sugar granules after they melt and cool they become crispy. That was probably a terrible explanation, haha. I have tried to make this recipe with coconut sugar and the results were not that great- they came out gooey and mushy. I prefer to make date sweetened desserts so when I try this recipe with dates I will let you know how they come out!
Chocolate Chip Chickpea Cookies

Ingredients
- 1 tbsp ground flax seeds
- 2 tbsp water
- 1 cup chickpeas drained and rinsed
- 1/2 cup almond butter
- 1 cup sugar organic cane sugar
- 1 tsp vanilla
- pinch salt
- 1 tsp baking soda
- 1 cup chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a small bowl mix together the flax seeds and water to make a flax egg. Let it sit 10 mins to firm up.
- Add all ingredients besides chocolate chips to a food processor and blend until creamy (about 60 seconds). Carefully remove the blade and stir in the chocolate chips with a spoon. Dough will be runny.
- Scoop out the dough in 1 inch circles onto a parchment paper lined baking sheet. Space them far apart because the cookies will spread and flatten out.
- Bake for 15- 16 minutes. Cookies will be soft when you first take them out. They need to cool for at least 10 more minutes to firm up If you want a softer cookie then only bake them for 12-13 minutes.
