This easy dump and go crockpot recipe uses jackfruit, white beans, and store bought bbq sauce to make simple vegan bbq shredded tacos! Jackfruit is a common meat substitute because of its shredded consistency that resembles chicken or pork. I tried to keep this slow cooker recipe as simple as possible by using store bought BBQ sauce and only 5 other ingredients. You can use whatever BBQ sauce is your favorite! This recipe is versatile and can also be used on a bun for a BBQ sandwich, as filling in a burrito, or with a side of mashed potatoes!

Slow Cooker BBQ Shredded Jackfruit
Equipment
- slow cooker
Ingredients
- 1/2 onion sliced
- 2 cans jackfruit drained, rinsed, and shredded
- 1 can white kidney beans, drained and rinsed
- 1 cup your favorite bbq sauce
- 1 cup veggie broth or water
- 1 tbsp chili powder
- 1/4 tsp black pepper
- 2 cloves garlic minced
Instructions
- 1. Using your hands or a fork, shred up all of the jackfruit into pieces.
- 2. Add all ingredients into slow cooker and stir.
- 3. Cook on high for 4 hours, stir occasionally.
