This easy dump and go crockpot recipe uses jackfruit, white beans, and store bought bbq sauce to make simple vegan bbq shredded tacos! Jackfruit is a common meat substitute because of its shredded consistency that resembles chicken or pork. I tried to keep this slow cooker recipe as simple as possible by using store bought BBQ sauce and only 5 other ingredients. You can use whatever BBQ sauce is your favorite! This recipe is versatile and can also be used on a bun for a BBQ sandwich, as filling in a burrito, or with a side of mashed potatoes!
When I first tested out this recipe I added the jackfruit whole and shredded it up after it was cooked. However it is definitely easier if you shred it up before you add it to the pot! Just use your hands and rip it up into shreds. Add in the BBQ sauce, spices, jackfruit, beans, onion and broth all together. Cook for 4 hours on high.I added white kidney beans to this recipe to add some protein. Jackfruit on its own is very low in protein and calories so the kidney beans help this recipe have better nutritional value. This is what it looks like after slow cooking for 4 hours. I served my bbq jackfruit as tacos with vegan oil free slaw on top!

Slow Cooker BBQ Shredded Jackfruit
Slow cooked jackfruit in barbecue sauce with white beans, onions, and chili powder
1. Using your hands or a fork, shred up all of the jackfruit into pieces.
2. Add all ingredients into slow cooker and stir.
3. Cook on high for 4 hours, stir occasionally.
Notes
Serve with vegan coleslaw on corn tortillas for tacos. Top with green onions and avocado to serve.For pulled “pork” sandwiches, serve on a bun with coleslaw.
