This is a favorite recipe of mine because it is quick and easy and is a pretty complete meal. The lentils give you your protein, the rice keeps you full and the peas give you a serving of veggies. It is so easy to make and can be seasoned to your taste.
Curry Rice With Lentils
Equipment
- Pressure cooker
Ingredients
- 1 onion diced
- 2 garlic cloves minced
- 2 cups brown rice
- 1 cup brown lentils
- 1 bay leaf
- 1 1/2 tsp curry powder
- 1 tsp vegetable boullion
- 1/2 tsp ground cumin
- 3 1/2 cups water or veggie broth
- 2 cups frozen peas
- salt and pepper to taste
- cilantro for garnish
Instructions
- 1. Press saute on Instant Pot. Once it has heated up add in the onions and cook for a couple minutes until soft, stirring occasionally. Add in garlic and cook for a couple more minutes. Splash in a tablespoon of water to prevent sticking.
- 2. Add in brown rice, lentils, bay leaf, curry powder, veg boullion seasoning, cumin and water and stir. Put the lid on. Make sure the valve is pointed to "sealing".
- 3. Press cancel for saute. Press manual/ pressure cook and set the timer to 16 minutes. When its done do a natural release which takes about 15-20 minutes.
- 4. When the pressure has released naturally, take off the lid. Add the frozen peas and stir. The heat from the rice will defrost them. Add salt and pepper to taste. Garnish with fresh cilantro. Serve as a side dish with tofu, tempeh, veggie loaf or more veggies.
