NO BAKE HEALTHY cosmic brownies! These brownies are gluten free, vegan, refined sugar free and high in protein! Simply combine ingredients together in a food processor, press into a baking dish and top with easy fudgy chocolate frosting! These brownies are date sweetened and have protein powder added for a boost of protein. Use date or coconut sugar sweetened chocolate chips to make these toatally refined sugar free!

INGREDIENTS YOU WILL NEED

  • MEDJOOL DATES
  • WALNUTS
  • CACAO POWDER
  • PSYLLIUM HUSKS
  • PROTEIN POWDER
  • VANILLA BEAN POWDER or extract
  • PLANT MILK
  • CHOCOLATE CHIPS
  • ALMOND BUTTER
  • SPRINKLES

HOW TO MAKE NO BAKE COSMIC BROWNIES

  • Blend up brownie ingredients in food processor
  • Press batter into oiled 8×8 pan
  • Melt chocolate chips on double boiler and stir in milk and almond butter to make the frosting
  • Spread frosting on brownies, top with sprinkles, refrigerate and ENJOY!

NOTE- these brownies are delicious in their raw state but they taste incredible warmed up in the microwave for 30 seconds. The frosting transforms into hot fudge, and with a scoop of vanilla ice cream you have yourself a healthy hot fudge brownie sundae! I’ll be making these no bake brownie sundaes on repeat this summer!

NO BAKE COSMIC BROWNIE TIPS

  • Use the softest medjool dates you can find. The dates provide sweetness, moisture and hold the brownies together in this recipe. Blend them up first by themselves to form a paste before adding in other ingredients to avoid date chunks in the end result.
  • This recipe calls for psyllium husks BUT you can still make these if you don’t have any just by subbing 1 or 2 tbsp of milk instead of the psyllium gel. The recipe will still work without the psyllium. I have tried using the same amount of ground flax + water and the end result was kind of wet /mushy. So you could also try making a super thick flax egg with 2 tbsp ground flax and 2 tbsp water.
  • I use vanilla Truvani brand protein powder for no weird aftertaste, but use whatever one is your favorite. I have also used plain unsweetened pea protein and that adds a ton of protein to the end result. Vanilla or chocolate flavored protein will work, or sub with oat flour if you don’t have any protein powder.
  • To make these completely refined sugar free, look for chocolate chips that are sweetened with dates or coconut sugar like the HU brand. Look for sprinkles that are made without artificial dyes. It is very hard to find sugar free, dye free sprinkles but some are available on Amazon. I used the sprinkles from Trader Joes- they are made with natural vegetable dyes but do contain sugar. Real cosmic brownies use candy coated chocolate chip sprinkles which can be found on Amazon.
  • Use a cup with a flat bottom wrapped in parchment paper to press the brownie into the pan.

Ingredients
  

For the psyllium gel

  • 2 tbsp psyllium husks see substitutions below
  • 4 tbsp water

For the brownie batter

  • 12 pitted medjool dates
  • 1 1/4 cup walnuts
  • 12 cup protein powder vanilla or chocolate will work
  • 4 tbsp cocoa powder
  • 1 tsp vanilla bean powder or extract
  • 1 tbsp milk if needed for moisture

For the chocolate fudge frosting

  • 1/2 cup chocolate chips
  • 2 heaping tbsp almond butter or peanut butter
  • 1/3 cup soy milk or other milk of your choice
  • 2 tbsp sprinkles look for some that are free of dyes

Instructions
 

  • 1. In a small bowl combine the psyllium husk with 4 tbsp of water. Let sit for 10 minutes to thicken and form a gel
    *if you don't have psyllium then just use 2 tbsp of milk to substitute
  • 2. To a food processor add the 12 pitted dates and blend until a ball forms. Blend for 10 more seconds til the dates are really mashed up like a paste.
  • 3. Add in the walnuts, cacao powder, protein powder, vanilla extract and psyllium gel and process til smooth. Add in 1 tbsp of milk if the batter is too dry.
    It should be slightly crumbly but hold together when you squeeze it.
  • 4. Oil an 8×8 baking dish with 1 tbsp of oil. Press brownie batter into the pan using the back of a flat cup.
  • 5. For the chocolate frosting- set up a double boiler to melt 1/2 cup of chocolate chips. Once melted add in 2 heaping tbsp of almond or peanut butter and stir. Slowly add in 1/3 cup of plant milk and stir. The frosting should be shiny and smooth, if it looks too dry keep whisking and stir in a touch more milk. Remove from heat.
  • 6. Pour the frosting on top of the brownies and smooth out with the back of a spoon. Top with sprinkles. Refrigerate for at least 1 hour to firm up. Store in the fridge. Also tastes delicious warmed up in the microwave served with vanilla ice cream!
