
I never thought of making quinoa in the slow cooker until I saw someone else on Youtube do it! I made this simple vegan quinoa recipe in the crockpot that can be thrown together for an easy meal. It takes about 4 hours on high to cook but you could try cooking it low and slow if you need to cook it longer. I love this recipe because it has veggies, grains, and protein all in one meal. I served it in a bowl with tofu, avocado and green onions on top. Delicious and filling!

Crockpot Mexican Style Quinoa
Simple slow cooker quinoa recipe with black beans, corn, bell pepper, tomatoes and spices

Ingredients
- 1 onion diced
- 1 bell pepper diced
- 2 garlic cloves minced
- 1 cup frozen corn
- 1 14 oz can black beans drained and rinsed
- 1 14 oz can fire roasted tomatoes
- 1.5 cups quinoa rinsed
- 2 cups water or veg broth
- 1 tbsp chili powder
- 1/2 tsp cumin
- 1/4 tsp black pepper
Instructions
- 1. Add all ingredients to a slow cooker and stir.
- 2. Cook on high for 4 hours.
Notes
This quinoa recipe is good on its own but to make it a complete meal try serving with chili stir fried tofu, avocado, and green onion.
I cooked this recipe on high for 4-5 hours and stirred halfway through. If you need a longer cooking time, cook on low for 6-7 hours, however I personally have not tried this yet.
