
Refined sugar free, date sweetened, oil free, chocolate chip cookie protein granola! Delicious crunchy treat to add on your yogurt or eat as a snack. Made with simple whole food ingredients and added protein powder.
INGREDIENTS
Wet ingredients
- 1/2 cup homemade date paste (or sub maple syrup or coconut sugar, or sugar free alternative) see recipe for making homemade date paste
- 1/4 cup runny creamy almond butter. Cashew or peanut butter will also work
- 1/8 cup milk of your choice- soy, almond, oat all work
- 2 tsp vanilla extract or vanilla paste
Dry ingredients
- 1 cup rolled oats- look for oats that are organic and “glyphosate free”. I use the brand “One Degree”
- 1/4 cup vanilla protein powder- I like the brand “Truvani” for no aftertaste, but use whatever is your favorite, or sub 1/4 cup more oats
- 1 cup walnuts roughly chopped
- 1/3 cup chocolate chips
INSTRUCTIONS
- 1. Preheat oven to 300 degrees.
- 2. Mix the wet ingredients in a large mixing bowl until completely smooth. Add in the dry ingredients and mix till well combined.
- 3. Spread out on a parchment paper lined baking tray. Use your hands to spread the granola out evenly in one flat layer.
- 4. Bake for 40- 45 minutes total. I think 42 is the perfect amount for my oven 🙂 flip every 15 minutes~~ Bake for 15 mins, take out of the oven and flip, put back in for another 15 mins, take it out and flip a third time and put it back in for 12 minutes.
- 5. Remove from oven and let cool completely to room temperature- about 30 minutes. It should be nice and crispy crunchy and golden brown without being burnt.
