1. Blend up 1 cup raw cashews in a high powered blender to make cashew flour.
2. Use a lemon zester to zest 2 lemons. Juice 1 of the lemons and set aside the juice. You will need about 2 -3 tbsp of lemon juice.
3. Add the lemon zest, cashew flour, protein powder, pitted dates to a food processor and blend until smooth. Slowly add the lemon juice one tablespoon at a time- you don't want the mixture to be too wet, but it should hold together when you squeeze it.
4. Roll the dough into bite size balls. Roll balls in 2 tbsp of vanilla protein powder for a frosty look.
