Nutty Caesar Dressing

A plant based lower sodium caesar dressing using nuts and seeds

- 1/2 cup raw cashews
- 1/2 cup hemp seeds
- 1/2 cup raw pumpkin seeds
- 1 1/2 cups water
- 2 tbsp dijon
- 1.5 tbsp capers plus the juice
- 1 lemon juiced
- 4 tbsp nutritional yeast
- 2 tbsp white wine vinegar
- 1 garlic clove
- fresh cracked black pepper
Soak nuts and seeds in water for 1 hour ahead of time. Drain out the water before adding to blender.
Add soaked/ drained nuts and seeds to blender with all of the rest of the ingredients and blend until smooth and creamy. Add more fresh cracked pepper at the end. Keeps up to 5 days in the fridge.
You can use any combination of nuts/ seeds in this recipe to equal 1/2 cup total. Cashews will give the creamiest result.
Option to add 1/2 tsp liquid aminos for a more salty flavor.
