Lentils AND Quinoa in the Instant Pot- Pot in Pot Method

How to cook lentils and quinoa simultaneously in the Instant Pot

Ingredients
  

  • 1.5 cups black lentils
  • 2 1/4 cups water
  • 2 tbsp seasoning blend of your choice- I use Italian blend
For the quinoa
  • 3/4 cup white quinoa
  • 1/4 cup red lentils or sub more quinoa
  • 1 3/4 cups water
  • 1/2 tbsp no salt seasoning blend

Equipment

  • 1 Instant Pot electric pressure cooker
  • 1 tall stand or egg steamer rack
  • 1 stainless steel dish- Instant Pot insert

Method
 

  1. 1. Combine the lentils ingredients in the Instant Pot inner pot.
  2. 2. Place a metal trivet/ stand directly into the innerpot/ on top of the lentils. I use an egg steamer rack for this purpose. The rack should be at least 2 inches tall.
  3. 3. Place stainless steel dish on top of the rack. Mix together the quinoa ingredients in the stainless steel dish.
  4. 4. Place on the lid to the Instant Pot, turn the valve towards "sealing". Pressure cook manual for 12 minutes. When the timer goes off wait another 17 minutes to do a natural release.
  5. 5. Carefully remove the lid once all of the pressure has released. Use an oven mit to carefully remove the top stainless steel dish and rack. Fluff quinoa and lentils with a fork.
