- 1. Add all ingredients to a high power blender such as a vitamix and blend for 30- 60 seconds until completely smooth. Store in an air tight container for up to 4 days. Use on salads or as a dip.
Notes
If using a high powered blender theres no need to soak the cashews ahead of time. If you blender is not high power then soak and drain the cashews for atleast 1 hr before blending.
You can sub cashews for sunflower seeds, peeled almonds, macadamia nuts.
If you want a thinner dressing add 1/4 cup more liquid before blending. For a thicker dressing add a tbsp or 2 more nuts.
Add a big squeeze of sriracha to make a creamy spicy dressing.
